This quick chicken and asparagus stir-fry is a go-to 20-minute spring dinner — high in protein, full of crunch, and alive with savoury soy sauce flavour.
Instructions
Prepare ingredients: Slice 300g chicken breast into thin strips. Snap the woody ends off 250g asparagus and cut into 4cm pieces.
Heat the pan: Heat 20ml olive oil in a wok or large frying pan over high heat until very hot.
Cook chicken: Add chicken strips and stir-fry for 4–5 minutes until golden and cooked through. Push to the side of the pan.
Add asparagus: Add asparagus to the pan and stir-fry for 3 minutes until bright green and tender-crisp.
Add soy sauce: Pour 30ml soy sauce over everything and toss to combine. Cook for 1 more minute.
Serve: Serve immediately over steamed rice or noodles.
