This 15-minute salmon and spinach dinner is proof that healthy and delicious don't require effort. Pan-seared salmon with garlicky wilted spinach is a weeknight lifesaver.
Instructions
Season the salmon: Pat 2 salmon fillets dry and season generously on both sides with salt and pepper.
Sear the salmon: Heat 15ml olive oil in a non-stick pan over medium-high heat. Place salmon skin-side down and cook for 4 minutes without moving. Flip and cook for another 2–3 minutes until cooked through. Remove and rest.
Cook the spinach: In the same pan, add remaining 15ml olive oil. Add 2 minced garlic cloves and cook for 30 seconds. Add 150g spinach and toss until wilted, about 2 minutes.
Season: Season the spinach with salt, pepper, and a squeeze of lemon if available.
Serve: Plate the spinach and top with the salmon fillets. Serve immediately.
