This creamy avocado and feta dip is the ultimate 5-minute spring appetiser — tangy from the feta, rich from the avocado, and bright with lemon. It disappears fast.
Instructions
Mash the avocado: Halve 2 ripe avocados, remove the stone, and scoop the flesh into a bowl. Mash roughly with a fork.
Add the feta: Crumble 100g feta cheese into the bowl and mix to combine — leave some chunks for texture.
Season: Squeeze in the juice of 1 lemon and drizzle with 20ml olive oil. Season with salt and pepper to taste.
Mix: Stir together, keeping a slightly chunky texture throughout.
Serve: Transfer to a serving bowl, drizzle with extra olive oil, and serve immediately with crackers, bread, or crudités.
