Baked Feta with Cherry Tomatoes

Description

Creamy baked feta with burst cherry tomatoes and fragrant basil — the iconic baked feta recipe that took the internet by storm. Perfect for spring when tomatoes are coming into their best.

Instructions

  1. Preheat your oven to 200°C (180°C fan).
  2. Arrange: Place the block of feta in the centre of a small baking dish or ovenproof pan. Scatter the cherry tomatoes all around it.
  3. Season: Drizzle the olive oil generously over the feta and tomatoes. Season the tomatoes with salt, black pepper, and a pinch of chilli flakes if desired. Add a few sprigs of thyme if available.
  4. Bake for 25–30 minutes until the feta is golden at the edges and soft in the centre, and the tomatoes have burst and become jammy.
  5. Finish: Tear the fresh basil over the top as soon as it comes out of the oven.
  6. Serve immediately with crusty bread for dipping. Also excellent tossed through hot pasta.
