Simple oven-baked salmon with fresh lemon, dill, and olive oil — a classic, healthy spring dinner that's completely foolproof and ready in 20 minutes.
Instructions
Preheat your oven to 200°C (180°C fan).
Line a baking tray with parchment paper. Place the salmon fillets on the tray, skin-side down.
Season: Drizzle with olive oil and season generously with salt and black pepper.
Garnish: Lay thin lemon slices over each fillet. Scatter fresh dill sprigs over the top (or tuck them under).
Bake for 12–15 minutes depending on thickness. The salmon is ready when it flakes easily at the thickest point but still has a slightly translucent, moist centre.
Serve with a final squeeze of lemon juice, steamed new potatoes, and a green salad.
Tips
For extra flavour, spread a thin layer of Dijon mustard over the fillets before adding the lemon and dill.
