Succulent prawns sizzled in golden garlic butter with a squeeze of lemon — a classic that's ready in under 10 minutes and absolutely irresistible.
Instructions
Prep the prawns: If using raw prawns, peel and devein, leaving the tails on for presentation. Pat thoroughly dry — moisture is the enemy of a good sear.
Make the garlic butter: Melt the butter in a large frying pan over medium heat. Add the finely sliced or minced garlic and cook for 1–2 minutes until golden and fragrant. Do not let it burn.
Cook the prawns: Increase the heat to high. Add the prawns in a single layer (work in batches if needed). Cook for 1–2 minutes per side until pink and opaque. They cook very quickly — overcooking makes them rubbery.
Finish: Squeeze over the lemon juice and add a little lemon zest. Swirl the pan to combine everything into a glossy sauce. Season with salt and black pepper.
Serve immediately with crusty bread to mop up the garlic butter, or over rice or pasta.
Tips
A pinch of chilli flakes adds a lovely kick.
Add fresh parsley at the very end for a burst of freshness.
