Juicy chicken thighs marinated with rosemary, garlic, and lemon then grilled to perfection. A crowd-pleasing spring BBQ staple that never disappoints.
Instructions
Make the marinade: Finely chop the rosemary needles. Combine with minced garlic, lemon juice, lemon zest, a generous drizzle of olive oil, salt, and plenty of black pepper.
Score and marinate: Make two or three deep cuts in each chicken thigh. Rub the marinade all over, pressing into the cuts. Cover and refrigerate for at least 1 hour, ideally overnight.
Bring to room temperature for 30 minutes before grilling.
Preheat the grill to medium-high heat. Oil the grates.
Grill: Cook skin-side down for 6–8 minutes until well charred and the skin releases easily. Flip and grill for a further 8–10 minutes until the juices run clear and the internal temperature reaches 75°C.
Rest for 5 minutes before serving with lemon wedges.
