Description

Instructions

  1. Prep the cucumber: Slice into rounds or half-moons. Optionally halve lengthways and scoop out the seeds for extra crunch.
  2. Wash the greens: Rinse the arugula and spinach. Spin or pat dry thoroughly.
  3. Make the lemon dressing: Whisk together lemon juice, a generous drizzle of good olive oil, a pinch of salt, and pepper. Add a tiny grating of lemon zest and a small drizzle of honey for extra complexity.
  4. Assemble: Combine the arugula, spinach, and cucumber in a large bowl.
