Description

A simple, no-cook spring salad of sweet peas, crumbled feta, crisp radish, and fresh mint. Ready in minutes — perfect as a light lunch or side dish.

Instructions

  1. Blanch the peas: Cook in boiling salted water for 2 minutes. Drain and plunge into ice-cold water to preserve the vivid colour. Drain well.
  2. Prep the radishes: Wash and thinly slice into rounds.
  3. Make the dressing: Whisk together a drizzle of olive oil, a squeeze of lemon juice, salt, and a small pinch of sugar.
  4. Assemble: Combine peas and radishes in a serving bowl. Crumble feta generously over the top.
  5. Add the mint: Tear the mint leaves and scatter over the salad.
  6. Dress lightly just before serving and toss gently.
