Instructions
Wash and dry the arugula and place in a large bowl.
Make the dressing: Whisk together the olive oil, lemon juice, a pinch of salt, and black pepper.
Dress the arugula and toss lightly. Dress at the very last moment as arugula wilts quickly.
Plate on a serving platter or individual plates.
Shave the Parmesan directly over the salad using a vegetable peeler to create thin, elegant curls.
Finish with a little lemon zest and a final drizzle of olive oil. Serve immediately.
