Description

The simplest Italian salad: peppery arugula tossed with shaved Parmesan, fresh lemon juice, and good olive oil. Four ingredients, endlessly satisfying.

Instructions

  1. Wash and dry the arugula and place in a large bowl.
  2. Make the dressing: Whisk together the olive oil, lemon juice, a pinch of salt, and black pepper.
  3. Dress the arugula and toss lightly. Dress at the very last moment as arugula wilts quickly.
  4. Plate on a serving platter or individual plates.
  5. Shave the Parmesan directly over the salad using a vegetable peeler to create thin, elegant curls.
  6. Finish with a little lemon zest and a final drizzle of olive oil. Serve immediately.
