Description

Oven-baked cod fillets with fresh lemon and thyme — a simple, clean-tasting spring fish dinner that lets the quality of the fish shine through.

Instructions

  1. Preheat your oven to 200°C (180°C fan).
  2. Prep the cod: Pat the fillets dry with kitchen paper. Place in a single layer in a lightly oiled baking dish.
  3. Season: Drizzle generously with olive oil. Season with salt and black pepper. Scatter fresh thyme sprigs over the top and lay thin lemon slices across each fillet.
  4. Bake for 15–18 minutes, depending on the thickness of the fillets. The cod is done when it flakes easily with a fork and has turned opaque all the way through.
  5. Finish with a final squeeze of fresh lemon juice.
  6. Serve with roasted new potatoes, steamed vegetables, or a light salad.

Tips

  • A drizzle of butter over the cod in the last 5 minutes of baking adds richness.
  • Swap thyme for dill or parsley for a different flavour profile.
