Oven-baked salmon and fresh asparagus on one tray with lemon and olive oil — a simple, healthy spring dinner with almost no washing-up.
Instructions
Preheat your oven to 220°C (200°C fan).
Prep the asparagus: Trim the woody ends. Arrange in a single layer on a large baking tray. Drizzle with olive oil, season with salt and pepper, and toss to coat.
Prep the salmon: Place the salmon fillets on the same tray, nestled among the asparagus. Drizzle with olive oil, season generously with salt and pepper, and lay thin lemon slices over each fillet.
Bake for 12–15 minutes, depending on the thickness of the fillets. The salmon is done when it flakes easily with a fork and the asparagus tips are beginning to crisp.
Finish with a final squeeze of fresh lemon juice over everything.
Serve directly from the tray with crusty bread or new potatoes.
Tips
Add a drizzle of honey and a pinch of chilli flakes over the salmon before baking for extra flavour.
