Instructions
Cook the peas: Blanch 300g fresh or frozen peas in boiling water for 2 minutes. Drain and transfer immediately to cold water to preserve the colour.
Blend: In a food processor, combine the peas, juice of 1 lemon, 2 crushed garlic cloves, and 40ml olive oil. Blend until smooth. Season generously with salt and pepper.
Adjust consistency: Add a tablespoon of water at a time if the hummus is too thick, blending between additions.
Taste and season: Adjust lemon juice and salt to your liking.
Serve: Transfer to a bowl, drizzle with olive oil, and serve with pitta or fresh vegetables.
