Instructions
Prep the asparagus: Snap off the woody ends, wash, and pat dry.
Season: Toss in olive oil, salt, and black pepper.
Preheat the grill to high heat. A very hot grill is essential for good char marks.
Grill: Lay the asparagus perpendicular to the grates. Cook for 2–3 minutes per side until tender with char marks.
Finish: Transfer to a serving plate. Immediately squeeze lemon juice all over and add lemon zest.
Top with shaved Parmesan (use a vegetable peeler) and serve immediately.
Tips
Work quickly once off the grill — the asparagus cools fast.
A pinch of chilli flakes adds a welcome kick.
