Instructions
Prep the zucchini: Trim the ends and slice lengthways into 5 mm thick slabs, or use a peeler to cut long, thin ribbons.
Season: Brush both sides with olive oil and season generously with salt and black pepper.
Preheat the grill to high heat.
Grill: Cook for 2–3 minutes per side until softened with clear char marks. Work in batches if needed — don't crowd the grill.
Arrange on a serving plate, overlapping slightly.
Top with crumbled feta. Tear the mint leaves and scatter over everything. Drizzle with a little extra olive oil.
Serve warm or at room temperature.
