Instructions
Cook the quinoa: Rinse, then combine with 360 ml water and a pinch of salt. Bring to a boil, cover, and simmer for 15 minutes. Remove from heat, steam for 5 minutes, fluff with a fork, and allow to cool slightly.
Massage the kale: Remove the tough stems and tear into bite-sized pieces. Drizzle with olive oil and a pinch of salt. Using your hands, massage firmly for 2–3 minutes until the kale darkens, softens, and reduces in volume. This removes bitterness.
Prep the avocado: Halve, stone, and slice. Squeeze a little lemon juice over it to prevent browning.
Make the dressing: Whisk together lemon juice, a drizzle of olive oil, salt, and pepper.
Assemble: Divide quinoa between two bowls. Top with the massaged kale and avocado slices. Drizzle the dressing over everything and serve.
