A simple spring classic that turns humble asparagus into something spectacular. Roasting brings out a natural sweetness, while garlic and lemon keep it bright and fresh.
Instructions
Preheat your oven to 220°C (200°C fan).
Prep the asparagus: Snap off the woody ends, wash, pat dry, and arrange in a single layer on a large baking tray.
Season: Drizzle with olive oil and toss to coat. Scatter over the minced garlic and season generously with salt and black pepper.
Roast for 12–15 minutes until the tips are lightly crisped and the spears are tender when pierced with a knife.
Finish: Remove from the oven and immediately squeeze lemon juice over the top. Add lemon zest for extra brightness.
Serve immediately as a side dish.
Tips
Don't overcrowd the tray — the asparagus will steam instead of roast.
Thin spears need only 10 minutes; thicker ones up to 18.
