This nourishing one-pot lentil and spinach soup is hearty, healthy, and comes together effortlessly — a warming spring dinner that's also meal-prep friendly.
Instructions
Sauté shallots: Heat a drizzle of oil in a large pot over medium heat. Finely slice 2 shallots and cook for 4–5 minutes until softened.
Add lentils and stock: Rinse 200g lentils and add them to the pot along with 800ml vegetable broth. Bring to a boil, then reduce to a simmer.
Cook the lentils: Simmer for 20 minutes until the lentils are soft and beginning to break down. Season with salt, pepper, and a pinch of cumin if desired.
Add spinach: Stir in 100g fresh spinach and cook for 2 minutes until wilted.
Serve: Ladle into bowls and finish with a drizzle of olive oil and a squeeze of lemon.
