This one-pot prawn and tomato stew is bold, vibrant, and on the table in 20 minutes — the perfect light spring seafood dinner with barely any washing up.
Instructions
Make the base: Heat 30ml olive oil in a wide pan over medium heat. Crush and add 3 garlic cloves, cooking for 1 minute until fragrant.
Add tomatoes: Pour in 400g chopped tomatoes, season with salt and a pinch of chilli flakes if desired. Simmer for 8–10 minutes until the sauce thickens slightly.
Add prawns: Add 300g raw, peeled prawns to the tomato sauce. Cook for 3–4 minutes until they turn pink and are just cooked through.
Adjust seasoning: Taste and adjust salt and pepper.
Serve: Ladle into bowls and serve with crusty bread to mop up the sauce.
