Leeks, spinach, and fresh herbs are wilted in a cast-iron skillet, and the eggs are then nestled in and baked until just set. Crumbled feta and a squeeze of lemon finish it off.
1. Preheat oven to 190°C. Sauté leeks in olive oil for 6–8 minutes until soft and slightly golden.
2. Add garlic and chilli flakes, cook 1 minute. Add spinach and stir until wilted.
3. Season well, then make 4 wells in the greens. Crack an egg into each.
4. Scatter feta over the top and transfer the skillet to the oven.
5. Bake 8–10 minutes until whites are set but yolks still runny. Finish with herbs and lemon juice.Shared by Andreia
