Pea & Prosciutto Spaghetti

  • Spaghetti250 g
  • Prosciutto100 g
  • Parmesan50 g

Description

Sweet peas, silky prosciutto, and nutty Parmesan come together in this elegant spring pasta. On the table in 20 minutes.

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve 200 ml of pasta water before draining.
  2. Crisp the prosciutto: Heat a large frying pan over medium-high heat. Cook the prosciutto slices for 2–3 minutes until crisp. Remove and break into pieces. Leave the fat in the pan.
  3. Cook the peas in the same pan for 2–3 minutes until just tender.
  4. Combine: Add the drained spaghetti and a splash of pasta water. Toss over medium heat for 1–2 minutes.
  5. Finish: Remove from heat. Add most of the Parmesan and toss to combine. Season with black pepper.
  6. Serve immediately topped with the crispy prosciutto and remaining Parmesan.
