Juicy prawns and crisp spring asparagus in a fast, fragrant garlic and soy sauce. A healthy spring dinner that's on the table in just 15 minutes.
Instructions
Prep everything before you start: Stir-frying is fast, so have all ingredients ready. Peel and devein the prawns. Trim the asparagus and cut into 4 cm pieces. Mince the garlic.
Make the sauce: Mix the soy sauce with a splash of water and a teaspoon of sesame oil (if available). Set aside.
Heat your wok or large frying pan over the highest heat possible until it is very hot and just starting to smoke. Add a drizzle of oil with a high smoke point.
Cook the asparagus first for 2–3 minutes, tossing constantly, until bright green and tender-crisp. Remove and set aside.
Cook the prawns: Add a little more oil to the wok. Add the garlic and stir for 20 seconds. Add the prawns and cook for 1–2 minutes until just pink.
Return the asparagus to the wok. Pour over the sauce and toss everything together for 30 seconds.
Serve immediately over steamed rice or noodles.
