Description
A simple, no-cook spring salad of sweet peas, crumbled feta, crisp radish, and fresh mint. Ready in minutes — perfect as a light lunch or side dish.
Instructions
- Blanch the peas: Cook in boiling salted water for 2 minutes. Drain and plunge into ice-cold water to preserve the vivid colour. Drain well.
- Prep the radishes: Wash and thinly slice into rounds.
- Make the dressing: Whisk together a drizzle of olive oil, a squeeze of lemon juice, salt, and a small pinch of sugar.
- Assemble: Combine peas and radishes in a serving bowl. Crumble feta generously over the top.
- Add the mint: Tear the mint leaves and scatter over the salad.
- Dress lightly just before serving and toss gently.
