Silky whipped ricotta drizzled with golden honey is one of the most effortless and elegant spring appetisers you can make. It pairs beautifully with toasted sourdough or crackers.
Instructions
Whip the ricotta: Add 250g ricotta to a food processor along with 20ml olive oil and the zest of 1 lemon. Blend for 1–2 minutes until light and very smooth.
Season: Taste and season with salt and white pepper. Add a squeeze of lemon juice to brighten the flavour.
Transfer: Spoon into a wide, shallow serving bowl and create a well in the centre with the back of a spoon.
Drizzle: Pour 30ml honey into the well and let it pool naturally.
Serve: Finish with extra lemon zest and serve immediately with toasted bread, crackers, or sliced fruit.
